This wine is produced using a very interesting technique: the stems of the grapes are partially cut at their base in order to interrupt the flow of nutrients going to the fruit. This way they will start to dry prematurely while being exposed to the elements. After the grapes are finally harvested and pressed they will go through a meticulous vinification process and the wine will be left to rest and mature for a minimum of two years in a purposely built concrete tank, as winemakers use to do back in the days, hence the respect paid to this old technique by applying a cement coating on the bottle.
Once bottled they are be kept in the cellar for a minimum of six months before being released.
This wine presents a deep and elegant garnet red colour, with intense aromas of black cherry, blackberry and ripe wild strawberry, evolving into dark plum notes, jam, marasca cherry and vanilla with hints of tobacco, cocoa and green pepper. All this aromas are then translated into flavours marrying the palate with balanced tannins and acidity, ending with a long and elegant finish.
Needless to say this wine has won the most important awards worldwide.
